Pandemic Baking

I’m finally cleaning out my photos from my smartphone. About 14.5 GB’s worth. Most of the images are from our travels (over the y-e-a-r-s, yes that’s right. years….). But last year, during the pandemic, I did quite a lot of baking for the older one. At his request, he would watch these cooking shows, baking how-tos on Youtube, and then ask me to replicate the recipe. I’d like to say that I made each one to perfection. Honestly, most were a one-and-done recipe, but there is one (or two) that we might bake again. Feel free to click on any of the links and give it a try. Enjoy!

Matcha Cinnamon Rolls. I’d like to say I followed the recipe exactly, but I couldn’t. It required way too much sugar. And I decided against the icing, which is probably why it didn’t taste so sweet. It was the first and last time I made this.

Brown Butter Toffee Chocolate Chip Cookies (aka Two-Day Chocolate Chip Cookie). Our boy wanted me to make this. I’ve made chocolate cookies before, but the receipt REQUIRED that the cookie “rest” (yes, I said rest.) for two whole days!!!! (Thanks, Tasty…) I skipped the toffee, which is not a favorite in the house, and turned it into a “regular” cookie recipe. The cookie out greaaaaaat, but I do not want to keep the cookie batter in my fridge for two days. That’s two days too long to be kept out of my tummy.

Easy Homemade Soft Pretzels. Probably the favorite of the baking moments. The boy and I made these during the middle of his lunch break.

Two-Ingredient Apple Pie Cups by Pillsbury. Ehh… I’m don’t know if the apples were too big or what, but we were not impressed with this. However, it was easy to make.

Doubletree Hotel Chocolate Chip Cookies. This is hands down the best chocolate chip cookie. The right amount of sweet and salty taste to a cookie, thanks to that little bit of lemon. MMMMmmmmm gooooood.
